Any baking without nut flour?

My son cannot take nuts/nut flour to school so all the peanut butter

recipes/nut flour recipes are not going to work for me.

Are there any snacks that aren't just veggies but are like cakes/cookies

without nut flours?

My favorites include Cheese Crisps, dates stuffed with cheese, Prosciuto rolled

up in

cheese, candy made of boiled honey with butter beaten into it, fruit leather,

dates wrapped

in bacon and baked until the bacon is crisp.

I am experimenting with some baking using half ground pumpkin seeds and half

ground dried coconut instead of nut flour. For us, the trick is to avoid nuts

AND eggs, but if you can eat eggs, this should work for you in many recipes.

Just keep in mind that seeds are not for beginners. Dried coconut is pretty

fibrous and shouldn't be used in the very beginning either, but can probably be

used before any kind of seed.

How about silver dollar sized chicken pancakes with honey or guacamole

to dip them in?

Or silver dollar sized banana pancakes with some homemade jam to dip

them in?

How about macaroons (if coconut it tolerated)?

How about meringues?
