Guest guest Posted October 26, 2006 Report Share Posted October 26, 2006 I love the " Quick Granola Cookies " recipe from Lucy's Kitchen cookbook. I think they would almost fall into the category you're looking at, because they contain pecans (or walnuts), raisins, coconut, honey, a little butter and a bit of vanilla... all ground together in the food processer. They are rolled into balls, flatened slightly, then baked for just a short time, but really wouldn't need to be, since there's no egg in them. They are WONDERFUL and really easy to make. They get me through a chocoholic attack. I can't post the recipe exactly, because it would be copyrighted by Lucy.... but her cookbook is worth it's weight in gold just for this recipe alone.
