Guest guest Posted September 9, 2006 Report Share Posted September 9, 2006 1/3 cauliflower broken into flowerets 1 small onion sliced 1 tablespoon oil 1 tablespoon butter 3 cloves garlic, minced seasonings of your choice (e.g. basil, rosemary, sage, oregano)\salt and pepper 2 tablespoons homemade chicken broth, beef broth or water Put the cauliflower through the shredding disc of the food processor. Cook in boiling water for 4 minutes and drain well. Heat a large heavy skillet and add the oil. Brown the onion and garlic until caramelized. Add the cauliflower. Stir well, add broth and continue to cook until broth is absorbed. Add seasonings and butter and remove from heat when desired degree of doneness is reached about five more minutes.
