failed nut yoghurt

I was wondering if anyone could help. I tried to make the cashew nut

yoghurt, and it didn't work. The liquid separated and did not thicken

after 10 hours in the machine.

I am British, so wondered if I had made a mistake with the quantities-

we use the metric system, but I live in the States and my sons told me

that 2 quarts = 8 cups. So I increased the quantity of nuts and water

proportionately to make 2 quarts.

I waited till the liquid was cold before adding the honey and Progurt

(as indicated in a previous message when I asked about types of

yoghurt makers).

I used a processor to puree the nuts before making the milk. I was

surprised that there were lots of nuts in the sieve after straining it.

I wondered if this was the root cause. Should I use the machine I use

to make smoothies( the small blender)? Would that grind the nuts more

finely? Would that produce thicker milk? Would the milk still separate?

It also seemed odd adding only 1/4 tsp of Progurt to 2 quarts of

liquid. Did I misunderstand?

I am very nervous making things for this diet that involve nuts, as it

always seems to go wrong. This is just something else that is added to

the list. I would love to give her yoghurt, but since she has to be

caein free, and I don't know where to find goats milk( the Dan doctor

was not happy using it unless I could guarantee it had a reliable

source.)-we live in the Princeton area.

I would also like to broaden the varieties of food she can eat, which

adding yoghurt allows me to do. It seems also that yoghurt has such

positive healing properties, and she is responding well to the diet. I

just want to do as much as I can, without feeling that I can't do this

diet as the recipes never seem to work!

PS without sounding immodest, I'm an able cook who enjoys cooking, but

my failures have intimidated me and I'm now frightened of trying a new

recipe, as I know the time and effort won't be worth it.- and we all

know how much extra time this diet requires of us anyway!

Please help. I really am fed up!
