Guest guest
Dear , Welcome to the SCDiet. You are correct it can be rather confusing and daunting. I thought I should share a bit about us, in hopes that it could help you. Like you, we came to the SCD conclusion totally paranoid about the gluten and the casein. We where fanatics about the GF CF diet. We had horrible reactions to these two proteins and I did not want to mess with them either. I read up on it and learned that Elaine discovered that the proteins in the yogurt are denatures so that it is rare that a reaction occurs. Here is what Elaine says: http://www.pecanbread.com/goatyogurt.html<http://www.pecanbread.com/goatyogurt.h\ tml> The Process of Making Yogurt Changes the Casein From Elaine Gottschall: " When we make yogurt and the pH falls to about 4.5 rather than 7.1-2 (as in fluid milk), the proteins are denatured which means that because of the acidity, the proteins lose their 3 dimensional structure (sterochemistry) which would be the reason allergists worry about casein. In yogurt and in the natural cheeses, the casein is denatured into a two-dimensional structure which would be less likely to cause allergic reactions. " I was so thrilled to learn this that we gained the courage to try it, we first used the goat yogurt. Now we can tolerate even the bovine. I now know why in the book she doesn't tell people with ASD NOT TO EAT THE YOGURT. Instead she says that there are guidelines that some find helpful...that you might want to try the yogurt but that SCD can be done dairy free. TRUST ELAINE before anyone else. I know that the autism community has brain washed some of us to being so careful about gluten and casein that we are truly paralyzed. Yet, I am so glad that we tried it now. Some are having success with the dairy free version and this is good. But I want to share that when we tried SCD without the benefits of the yogurt, we did not have the benefits that we had or the success that we have received since being on the yogurt. It was amazing the results we had with our autistic daughter. She started to ' " try " to talk for the first time, her deliriums vanished, her drop seizures vanished and her GI pain and diarrhea vanished. Within three months of using the yogurt she was smiling and laughing all the time, stimming had vanished and she now learned how to play! her eye contact was better and she even started to give hugs! It was truly like watching a miracle. AT the time I could hardly contain myself...I shared with everyone who would listen about our ELAINE miracle. Read testimonies and see that the yogurt is not the " bad guy " any more. Maybe the old store bought kind...but it isn't SCD yogurt. Some say to go slow on introducing the yogurt because the transition can be rough. It isn't the casein that causes the problem...it is the " die off " reaction. You see as the SCDiet starves out the bad gut guys...they release toxins as this bad gut flora dies...this makes us feel like we have the flue. Sometimes ASD behavior can worsen during this time. Going slow can help control this. The women here can help you with this if you want to go slow. It is a personal choice. WE chose not to go this slow. Activated charcoal and Epson Salts Baths help much with the symptoms of " die off " . After our first " die off " with the yogurt was when we realized that SCDiet was going to help our autistic daughter. She emerged a new child after this. In order to have the best results with SCDiet it is imperative that you go by the book. My book is tattered and even highlighted because of this. Elaine told us that what we do not digest does harm.....meaning that when we are new to SCD and the gut is healing....we do not always digest whole nuts, peanut butter and raw fruits and vegetable that well. When this happens the undigested food particles (SCD legal or not) reside in the intestines and they FERMENT bad gut guys...and the vicious cycle continues. In the beginning it is imperative for even us with ASD problem to go by the book and introduce things slowly. Review chapter 9 and 10 with a fine tooth comb. It was not fun...I am not going to lie to you...but after eating the SCDiet for 7 months, we now can eat most everything. We still have problems with the SCD dry beans and the honey candy and nuts...but we are doing so well we don't care. You can also go to www.pecanbread.com<http://www.pecanbread.com/> under food preparation, there you will find stages on when to introduce foods. Some find them helpful. I noticed that you are already eating foods that are way to hard to digest with a new gut on SCDiet. Even though ASD kids are often not confirmed as having intestinal problems, Elaine discovered with her research that almost all of them truly do have a GI condition. I know that this might make it hard to understand that you can't " jump " to eating whole nuts, beans and raw carrots yet...but try to go with it and see why. Keep in mind that it was the tortes that one the race and not the hair. Hope this helps you....best wishes and best of success. God Bless you and your boys!
