Brazilian nut Cookie recipe and a new broccoli recipe

Dear List:

I have previous posted this cookie recipe. My kids and husband love it. They

are nice and chewy with a nice outer crisp texture, almost like candy. You can

dry in a the oven warmer for four hours for a crisp cookie, its sometimes a nice

change.

Brazilian Nut Cookies

2 cups of cashew flour

4 cups of brazil nut flour

2 eggs beaten

1 cup of honey

2 tsp of vanilla

2 tablespoons of butter or coconut oil

1/8 tsp of salt

1 tsp of baking soda

bake 20 -25 minutes at 325 degrees

Chicken Broccoli Florets

I have this new recipe I would like to share since it is going over so well at

my house. I pan fry slice chicken with salt, white pepper (just a little) and

garlic, browning both sides. Set chicken aside, add 1/4 to 1/2 cup of water to

the hot pan and deglaze all the brown chicken glaze from cooking, bring water to

boil, add cut up broccoli florets, coat with the brown water mixture, cover for

2-3 minutes until bright green, remove cover, burn off remaining water while

tossing the broccoli to coat with the water, after water is gone, add 1-2

tablespoons of coconut oil, fry broccoli on both sides over medium heat (about

3-5 minutes are each side), will have a few dark brown spots. These broccoli

comes out so good. My girls really eat them well and steal mine off my plate.
