The higher temps seem to damage the goat milk proteins... so not going beyond 185 degrees F, we will have a better quality product, food wise. Since you add the starter AFTER you cool the milk, the boiling doesn't affect the bacterial culture. Patti goat yoguhrt I just goofed and boiled the goat milk, it actually came to a rolling boil.
