Sneaky Veggie Pancakes

Dear All,

I am trying to branch out from my son's banana pancake--as this is the only

thing he will eat thus far that is SCD legal (we just started the diet this

week). I found on the pecan bread website the " Sneaky Veggie Pancake " recipe

with squash (and any other pureed vegetable). I would love to hear other's

experiences with using veggies besides squash--the pancake has to resemble

the taste of bread as much as possible (as we are fooling him that it is

bread).
