Substiutions for rice and oatmeal for daughter's Waldorf School

My daughter started kindergarten this week at a Waldorf school. Grains

are a very important element in Waldorf education and each week, snack

is always the same. I have Wednesday through Friday figured out but

need help with

Mondays: Rice

Tuesdays: Oatmeal

I saw the recent post with the " I can't Believe it's not Rice " recipe

and I can't wait to try it! Any other rice ideas or ideas for the

oatmeal day? (I was thining white bean humous or lentils). My daughter

is doing so, so well with understanding that she can't eat the foods

that everyone else eats (right now), but I'd like her to eat a snack

that is at least somewhat similar to the other kids' snacks. Whatever

recipes I use need to be pre-made and sent to school in a container.

It can be heated up for her, if necessary.

Re; Cauliflower " Ric. " Don't use the spices in the rice recipe or the broth.

Substitute

water. You can then put honey in the " rice " and yogurt. You can also try adding

an egg and

vanilla and baking it as a rice pudding.
