He did very well for about a month, and then started settling back into pre- SCD behaviors after that, so last week we began with the intro diet again. He is eating ground beef, boiled or grilled chicken, eggs, butternut and acorn squash, green beans (I can't find fresh french cut), cooked apples, and bananas right now. He also drinks diluted grape jucie, apple cider and OJ. I would like to offer a nut butter to him, but am apprensive because so many children seem to have problems with them. I don't think Jack has a problem with peanut or almond butter, because his stools have been good when I used those in the past. But then, his behavior wasn't so good (stemming through the roof). I want to do this right, so I'm thinking of trying a different nut to make butter. I bought a few pounds of pecans, but am unsure as to the processing. Will a regular food processor with a little oil, say, safflower oil, do the trick? It doesn't seem that a processor would make the butter creamy enough - it seems like it would be on the crunchy side and therefore, less easy to digest. Please help.
