Guest guest Posted September 26, 2006 Report Share Posted September 26, 2006 This is easy, fast and the cheese is optional For each serving: 1 zucchini peeled 2 cloves of fresh garlic, minced 1 large pat of butter dried oregano to taste salt and pepper 2 rounded heaping tablespoons almond flour 2 oz. favorite yellow cheese Cut the peeled zucchini into long flat strips. Place on a few thicknesses of paper towel and squeeze out the moisture. Heat a 6 " skillet and add the butter. When it foams, saute the garlic over medium heat until soft. Add zucchini, and saute, stirring with a wooden spoon. Add the almond flour, cook and stir another 2 minutes. Add the cheese and stir. You can remove from the heat and stir gently until cheese melts.
