If it is a large one, the best thing to do would be to peal off the skin, then use the pealer to make zucchini strips. When you get down to the seedy part, just discard it. You can then saute the zucchini noodles. However, I used two ways: 1) if it was a larger zuke, I'd cut it into chunks width-wise, and use the core-r part of my vegtable peeler to scoop out the seeds. 2) medium zuke would get sliced in half lengthwise, and I would use a grapefruit spoon to scoop out. Like a dugout canoe, but with zucchini ;-) Either way was fast.
