Here in Toronto SCD cooking classes we use the egg whites in a carton.

I asked Jodi Bager (Grain-Free Gourmet) to check on legality and she

recalled Elaine approved and also added this:

> Egg beaters are a substitute.

> I got a letter from the egg white people attesting to its purity.

Please do not use instant coffee or eggbeaters. When food is handled

by a manufacturer, there are many processes and chemicals used which

are not even mentioned. Please do not take a whole food like an egg

and think one part of it is going to be a godsend
