Would it be okay to buy apple juice from a local farmer that only uses apples and presses them to make juice. If we bought this and then cooked it would it be okay to use or is there something to do with the fermentation process that makes apple cider different than apple juice? Guest guest Posted October 3, 2006 Report Share Posted October 3, 2006 This apple juice sounds fine..... in fact, that is exactly what Elaine meant when she refers to " apple cider " .... she meant fresh-pressed.... just the apples, straight from the press into the bottle. It's okay that it's not cooked.... because the fiber has been strained out. You *may* want to heat it... just to pasteurize it.... to avoid any possible bad bugs. I know there have been cases of e.coli from unpasteurized apple juice... although it's probably very rare. Anyway, beginners on SCD must cook their apples before eating.... but it's not a requirement to cook fresh JUICE. You DON'T want it to begin fermenting at all...... you want the fresh, unfermented apple juice/cider. I honestly think the terminology just depends on where you live and what people call it in your region. By the way, you can FREEZE fresh pressed apple cider/juice.... just leave enough headspace in the jar or container so that it can expand some as it freezes.
