Dried coconut, whether it is " turned to dust " or not, is an advanced food....

NOT for beginners. NOT for anyone who is still having digestive problems or a

flare-up. It is TOO fibrous.

The only form that is okay for beginners is homemade coconut milk.... and yes,

this was okayed by Elaine, despite it saying otherwise in the book.

So..... no dried coconut, coconut flour or coconut " dust " for SCD newbies, or

anyone who is having ongoing GI problems or other troubling symptoms. Just

wanted to clarify this.

Bubble's Upside Down Pineapple Cake

Hi Jen, It was actually Bubble's Cakes, our other daughter. Kiki's cake is

made of strawberries.

Make sure that the coconut is processed very well when making your flour. It

will make it easier to digest. If not turned into dust, coconut is an advanced

food that should not be eaten until you have significantly healed. So be weary.

Kiki can't even eat her own cake right now.
