The inability to eat these foods made me very emotional too! And to top it off, i'm still getting die-off after a month and a half - what's that about?!? Just needed to vent...so many frustrations! The inability to eat these foods made me very emotional too!Where do you live? I could send you a carrot cake =) I literally JUST made a carrot cake out of coconut flour, with yogurt 'cream cheese' frosting, that I now need to put in the freezer because voila! D this morning after a piece yesterday. And I used up the last of my yogurt to make the frosting, so I was yogurtless all day, on a day where I REALLY needed some soothing yogurt! Grrr. I guess I needed to vent too =) AND yesterday one of the best smoothies I've made in a while hit the deck when a box lid knocked my glass onto the driveway. The one my family makes has pineapple in it, which combined with the carrots makes it amazingly moist. I can't wait to try the almond flour and see if it still tastes good.
