They are small red beans, slight sweet (for beans), I've seen recipes where you make bean paste and use it to make frosting for cupcakes, etc. You may want to google it for a picture. They are 20% iron. I usually add more than 1c. in a recipe because they really aren't very big so they don't go far. Kidney beans are listed on the legal list now. It doesn't break down if it's white, light red, dark red so I go with light red. Debbie 41 cd Very old post, so I want to confirm. Are adzuki beans legal? I'll give them a try if they are.
