The original recipe was from a medieval cook book, which was adapted for use by SCAers (members of the Society for Creative Anachronism, who recreate the Middle Ages not as they were, but as they should have been). I loved it, and often made it at home... it became a staple for our house. So of course, I adapted it for SCD! One of my Mom's family recipes for Christmas was creamed pearl onions. I didn't care for my first effort at creating cream sauce using eggs and yogurt, and immediately thought of Brie Sauce. Then I recalled that Mom loved creamed spinach, and proceeded to put well drained chopped, cooked spinach in with Brie Sauce, and add some peeled steamed pearl onions, and a New Classic was born! <g> My niece maintains that putting Brie Sauce on veggies is a waste of good Brie Sauce.
