Anything? Brown a pound of ground round. Add chopped veggies of whatever kind he likes and tolerates. Add some spices. Meanwhile, grate around a half to 3/4 pound of sharp cheddar. Toss with 1.5-2 cups of blanched almond flour. Cut in 7.5-8 ounces dry curd cottage cheese. Add 3-4 eggs and stir. Now add the meat and veggies mix. Pat the mixture into a buttered casserole and top with more shredded cheddar. Bake at 325F for 35 minutes. This recipe is so new I haven't even named it! But in case anyone's interested, it's a version of the " mac-n-cheese " recipe that was floating around here with added meat and vegetables.
