sodium metabisulfate

Hey Gang -

I found a coconut milk (at our local Thai food store) with coconut, water,

citric acid and sodium metabisulfate (as a preservative)

No gums, no sugars!! But what the heck is sodium metabisulfate and more

importantly - is it legal?
