Guest guest Posted June 24, 2010 Report Share Posted June 24, 2010 So I made that strawberry recipe from tropical traditions the other day. But I made a few changes. Instead of 1 cup of coconut oil, which kind of squicked me out just thinking about it, I substituted 1/2 cup of cocoa butter, 1/4 cup of coconut oil and 1/4 cup water mixed with gelatin (let soften and then heat until barely liquid). I also added a few TB of cocoa butter (or you could use coconut oil for this) to the crust and baked it first for about 15 minutes, until it had browned, and then cooled it down. I like baked crusts that adhere. It came out really great - but it is still dense - very creamy and chocolately - almost like a cheesecake. I think next time I might take out 1/4 cup more oil and add 1/2 cup of water to the gelatin. The only problem with this cake - no way you can have just one piece!! Make it when you know you will have company - unless you are skinny and have no problems with the ingredients.
