I have tried cooking it like custard, but that did not help. I can't find nutrition info on the Via packet anywhere, though, so I suppose a letter from Starbuck's would be in order. Otherwise, I'm sure finely ground espresso would work as well. Guest guest Posted July 2, 2010 Report Share Posted July 2, 2010 I use a Cuisinart ice cream maker, and although it's firm when I take it out of the freezer, it's not hard as a rock. I know some people who don't have ice cream makers take it out of the fridge and stir it once and while before they freeze it--so I think it's any process that gets some air into it. -- How do you get the coconut milk ice cream, or cashew milk ice cream not to be hard as a rock once it is frozen? If the powdered coffee was being added to enough liquid that it would have made a cup of coffee, then you would use the same amount of coffee as water for the coconut milk. Although it's worthwhile to note that in the initial stages of the diet, it's best to go with weak coffee, not strong coffee. It calls for instant, so you'll need to experiment with other alternatives. The Cuisinart ice cream maker has a bowl with " blue ice " type liquid in it. You just put the bowl in the freezer for around 8 hrs to chill beforehand. *Cool all your ingredients first* --I made that mistake and wondered why the ice cream didn't work the first time. The Cuisinart has an open paddle to churn the ice cream and an open top, so plenty of air gets into it as it churns. You can also drop berries or other items into the ice cream from the top. I saw at Costco they had a Cuisnart for sale that had two bowls.
