Guest guest Posted July 15, 2010 Report Share Posted July 15, 2010 The fig tree is burgeoning but the rash appearing on my face and scalp seems to be telling me that figs are, for me at least, too high carb. What can anybody tell me? The online carb counters use grams for measurement, which means nada to me! Are they SCD okay or should I consider them anathema like I do grapes? I just HATE to " turn down " free, organic food!!! And if they're SCD edible, has anybody frozen them? Current me: Global Carb and Fungal Problems well-controlled past 30 yr. by extremely low-carb allergy/anti-yeast diet, SCD 01/05. After 35 yr. of allergy shots haven't needed them ever since! Magnesium/Vits A, B, D, E/Evening Primrose, Fish, Olive, and Other Oils, Lecithin. 2 grown kids recovered from serious developmental problems which I believe were fungally-caused. Guest guest Posted July 16, 2010 Report Share Posted July 16, 2010 Carol Figs are considered medium-carb, 11-19 grams of sugar per 100g serving. Figs are in the same group as apples, cherries, blueberries, pineapple, peaches…. 100g is about a cup, if I remember correctly. While not ranked as high-carb, figs still may be something your body can only tolerate in small amounts and not every day. I’m referring both to digestive and immune reactions along with increasing candida levels. I don’t tolerate fruits very well (and shouldn’t eat much given my insulin resistance). I have problems with a lot of fruits in the same class as figs, so have to restrict the amount I eat and how often (not very!) even though I either cook or juice all fruits. In fact, I can’t touch a fig, sends me over the edge quite rapidly. On the other hand I can eat applesauce (made with Granny apples) every day. A friend of mine has a fig tree and stores them by canning so she can use them throughout the year. She isn’t SCD, so I don’t think it will help to ask her what she uses in the mixture before canning. Figs might freeze OK, although I think canning might be better in terms of texture. Kim M. Guest guest Posted July 16, 2010 Report Share Posted July 16, 2010 Hi Carol: They are legal. My uncle has a couple fig trees. Here is what he does. He picks and washes them. Puts them in a very large container and freezes them. Once they are frozen, he takes them out of the freezer and lets them start defrosting a tiny bit... until he can handle them. Then he takes the mostly frozen figs, cuts the tips off and cuts them in quarters into a different container. You probably wouldn't want to freeze them again. So, he makes fig preserves. He makes one batch for me He puts the quartered figs into a large stock pot with about 16 ounces honey and cooks them down until thick. He then jars them in 8 oz mason jars. I don't know how he does it, but he seals the lids on the jars (He processes them by putting the round lid on then the outer lid and boiling them for a few minutes. I know that's not the proper way, but it works for him.) The fig preserves are outstanding. He makes some with sugar for the rest of the family. Let me tell you; I was helping him cut the figs last season and those half thawed figs are addicting. I probably ate a pound or more of them. My mom has about 4 gallons ready for me. I'm ready for some preserves. I probably ate a pound or more of them. Misty, I am really impressed that you can eat figs like this!
