Have you tried fish? It is much lighter than meat. Fish salads and egg salads too - if you are eating egg.

There are some recipes for cool soups with yougurt. Also veggie stews that you can eat room temperature.

Hey Jodi- I am a big fan of cold soups. You can saute veggies in butter and

herbs/spices and then add chicken stock and simmer for a while. When everything

is soft, puree the whole thing. After it's chilled, I like to stir in yogurt to

make it kind of tangy and creamy. My favorite is cucumbers, onions and dill! You

could also try a gazpacho recipe if you can tolerate tomatoes (and go ahead and

cook the veggies and puree it smooth even though most will have you leave the

veggies raw and a bit chunky)- it's like drinking salsa :)

I hope this gives you some ideas!

Thanks for the replies.

I guess I am just going to need to get more creative and spend more time in the

kitchen.

Maybe I will make my smoothies again with avocado. I seem to do well with

vegetable fats.

It's just I am the *quick* kind of SCD'er if there is such a thing..

Can of sardines with some olives whoosh! I'm done. Steak slivers with kim-chee

relish whoosh I'm done. Reheat some roast chicken with pickles whoosh I'm done!

Take left over roast chicken (I'm not a white meat fan) mix in avocado sludge

with pickles and cucumbers and I'm done. This is my kind of " cooking " LOL.

I like it quick. Because if I have too much kitchen time I start feeling caged

and resentful.. BUT YES, BETTER IN THE KITCHEN THAN CRYING IN AGONY ON THE

TOILET PASSING OUT. Bless the SCD.

I'm gonna try this chilled soup thing.

I will say one more thing- the awesome thing about the soup is that you can make

a huge pot and then freeze it in portion sizes. I just made 8 cups of the

cucumber soup so so I can grab one, thaw it, add some yogurt and I am off!

Jody, try cooked vegetable salads -- go ahead and cook the veggies to

whatever degree you need, drain them, and then chill them. Then combine

with small amounts (as tolerated) of chilled hard boiled eggs, hard

cheeses, thin-sliced cold meats. IF you have plates of these in the

fridge or freezer, you can just take out whatever you feel like eating at

a given point in time.

You can do chilled avocado-tomato juice with added veggies like cucumber

and herbs like parsley or coriander. Lemon or lime. Jalapeno if you like.

Whizz a few times and you are done.

Banana Ice Cream (it’s just bananas!) is not a meal per

se, but it is something refreshing and easy to make for the hot summertime

(hasn’t the East Coast had record summer temps this year?).

Thanks to whoever posted the Banana Ice Cream Recipe here a few

weeks ago – I’ve been making it every night for dessert lol!

Directions:

Peel, slice and freeze very ripe bananas. Put frozen banana

slices into a food processor or blender and blend until smooth and creamy. (I

add some vanilla extract). The texture is amazingly like a soft-serve ice

cream. I find it especially good with frozen mango added to the bananas –

it gives the ice cream a “tropical” flavor. Awesome!

man i miss my bananas! darn yeast!!! thoug i'm sadly ok with frozen goat yogurt

Finally I have worked up to being able to eat a nice handful of cherries.. they

are so delish I could finish a whole box!

Wow, what is your kimchee recipe? I'm still too lazy to have

done that though I keep meaning to and have a lovely

organic cabbage waiting for me to start.

I can't do a lot of banana's but I treat myself every few weeks.

No dairy and no nuts for me!

I have a great recipe for a cucumber salad that I need to post!

I only eat meat once a day, and I really don't crave it, so I kind of know how

you feel. Last night was the first time in awhile that I found meat appealing. I

had a taco salad with ground beef, cheese, a little slice of raw tomato (skin

and most seeds removed), a little slice of avocado, and a dab of yogurt. Even

though I had very little tomato and avocado, it was just enough to make the dish

taste better then it does with just meat and cheese. Kind of a good summer dish

too.

My mom bought a Vitamix last week, and instead of having a salad everyday for

lunch, she throws everything into the Vitamix to make a smoothie. I've been

thinking about exploring smoothies myself as well. Maybe my gut could handle raw

fruits and veggies better if they're pulverized.

I've also been eating a lot of jello. It tastes good when it's hot, especially

with pomegranate juice. I also have a glass of sparkling water with a splash of

grape juice every other day, which tastes fantastic after being out in the heat.

yeah but a banana her and there will make me itchy etc so not worth it - plus

why put them back if it's just a tease that I can have here/there I feel - I

want them all the time - so to fight my sweet addcition I should just stay away

since I'm ok with everything lame and bland now

Pom jello that sounds really yum!

I juice and strain and add to a smoothie to get that extra nutrition in sans

fiber. I think i will start doing that. I may also get back into adding raw

eggs in the smoothie.

I did that for the first time this morning and my smoothie was much creamier and

thicker than normal. I think I'll start doing that from now on!!!

It's funny, but I initially thought pom gelatin was totally gross. But pom juice

is expensive, so I ate it anyway. By the time I got to the last serving, I was

addicted to it! Sprouts recently had a great deal on it so I bought 4 bottles

:-).

You ought to know by now that although I am a darn good SCD cook, my

objective is to have darn good meals with a minimum of fuss.

I think there are a fair number of other people on this list who feel the

same way!
