There are some recipes for cool soups with yougurt. Also veggie stews that you can eat room temperature. You can saute veggies in butter and herbs/spices and then add chicken stock and simmer for a while. When everything is soft, puree the whole thing. After it's chilled, I like to stir in yogurt to make it kind of tangy and creamy. My favorite is cucumbers, onions and dill! You could also try a gazpacho recipe if you can tolerate tomatoes (and go ahead and cook the veggies and puree it smooth even though most will have you leave the veggies raw and a bit chunky)- it's like drinking salsa I hope this gives you some ideas! -Joanna > > Anoyone else finding themselves unable to consume the amount of meat or fats in the summer? Maybe I will make my smoothies again with avocado. I seem to do well with vegetable fats. It's just I am the *quick* kind of SCD'er if there is such a thing.. Can of sardines with some olives whoosh! I'm done. Steak slivers with kim-chee relish whoosh I'm done. Reheat some roast chicken with pickles whoosh I'm done! Take left over roast chicken (I'm not a white meat fan) mix in avocado sludge with pickles and cucumbers and I'm done. This is my kind of " cooking " LOL. I like it quick. Because if I have too much kitchen time I start feeling caged and resentful.. BUT YES, BETTER IN THE KITCHEN THAN CRYING IN AGONY ON THE TOILET PASSING OUT. Bless the SCD. I just made 8 cups of the cucumber soup so so I can grab one, thaw it, add some yogurt and I am off! Thanks to whoever posted the Banana Ice Cream Recipe here a few weeks ago – I’ve been making it every night for dessert lol! Directions: Peel, slice and freeze very ripe bananas. Put frozen banana slices into a food processor or blender and blend until smooth and creamy. (I add some vanilla extract). The texture is amazingly like a soft-serve ice cream. I find it especially good with frozen mango added to the bananas – it gives the ice cream a “tropical” flavor. Awesome! I only eat meat once a day, and I really don't crave it, so I kind of know how you feel. Last night was the first time in awhile that I found meat appealing. I had a taco salad with ground beef, cheese, a little slice of raw tomato (skin and most seeds removed), a little slice of avocado, and a dab of yogurt. Even though I had very little tomato and avocado, it was just enough to make the dish taste better then it does with just meat and cheese. Kind of a good summer dish too. My mom bought a Vitamix last week, and instead of having a salad everyday for lunch, she throws everything into the Vitamix to make a smoothie. I've been thinking about exploring smoothies myself as well. Maybe my gut could handle raw fruits and veggies better if they're pulverized. I've also been eating a lot of jello. It tastes good when it's hot, especially with pomegranate juice. I also have a glass of sparkling water with a splash of grape juice every other day, which tastes fantastic after being out in the heat. By the time I got to the last serving, I was addicted to it! Sprouts recently had a great deal on it so I bought 4 bottles :-).
