Guest guest Posted July 9, 2005 Report Share Posted July 9, 2005 hmmmmmm tofu.... my favorite yep, tofu is really good for you and full of protein which I'm learning is what is good for post-surgery patients I believe. There's two main ways to have it. You can buy 'silken tofu' which you can use as a base for smoothies, and there's regular tofu (which comes in soft, medium, firm and extra firm) I think the soft or medium would probably be best for being very soft and easy to eat (but never use it in smoothies!) Avoid fermented or fried tofu at first which although is delicious requires a bit more chewing. Regular tofu is really very versatile - it is commonly used in asian dishes - a particularly easy to eat one would be 'mapo tofu'. All you have to do is get mince pork and chop up the tofu (if chopped/minced really fine this requires very little chewing - could even work blenderdised I think) - throw it together in a pan and add a 'mapo tofu' sauce that you can get from any asian grocery store. Other than that, I personally like adding it to tomato sauce for pasta for a little extra goodness. again the soft/medium tofu can be mashed really fine so no chewing needed. If you find you like it (and it is a bit of an acquired taste) let me know and I'll try and think up some more easy-to-eat ideas. In a blenderized diet, you will need soft tofu. Soft desert tofu is great in smoothies and a good source of protien. Soft plain tofu is good for more savoury mixtures.
