Are they really going to do that in class--what is that called head cheese? I read an article on it.  Something about boiling a horse head (in this case hog I guess) and making cheese.  Somehow the person into making cheese got over it after this ;-).

 

I'll have to check out the blog.

I don't think head cheese is covered in the class ;) If you click through the link there's a class schedule and a video introducing it.Head cheese is something that I was always confused about. It's a hog head simmered to create a broth. The meat is returned to the broth and it is cooled in the fridge. The broth is thick like jello with bits of meat in it. No dairy involved!

I'll be taking the course, highly suggest everyone check it out and sign up if you can.Kat

I have no idea if they'll cover that in the class -- but she did have a

blog on it recently.

The Cheese Slave Blog is NOT an SCD site, but it does cover the Weston

Price type foods. It's easy to get confused if you are still

learning about SCD.
