This is my version of it: 1 Layer meat sauce (homemade...bottled has too much sugar for me. I add a bit of splenda if I want to sweeten it a bit.)>> Colavita makes a jar sauce that has NO fat and NO sugar (don't ask me how they do this but they do.) It's not bad either, if you are in a pinch or just lazy like me! Your zucchini lasagna recipe sounds wonderful, and I will try it some day when I am feeling ambitious ... BUT I have a real bad track record for lasagna experiments, so it might just be me and my pug eating this creation. One time I made a TOFU lasagna, and it was SO horrible that to this day, my husband & brother tell the story about my tofu lasagna on dark and stormy nights when they want to terrify children in the family. Also, like all good horror stories, it serves as a cautionary tale to all little Italian children (and those who are Italian at heart) that they should NEVER EVER EVER put tofu into their lasagna ... or else! ROFL! Back in my college days, a friend of mine wanted to impress her boyfriend and his parents by making lasagna, so I gave her my recipe. She called me the day after the dinner party and said she had done something terribly wrong, as the lasagna noodles were crunchy! Silly me, I had neglected to tell her to COOK the lasagna noodles before layering them in the pan! LOL! I've tried the ones you don't have to cook -- not bad, but not the same. And not available in those days, or I would have suggested them to save her a step. I still chuckle when I make real lasagna, about her not cooking those noodles! I tried to make mashed potatoes. I just peeled the potatoes andput them into boil. After an hour they still were not boiled. Needless to say, it helps to CUT the potatoes up not boil them whole ROFL. I never made pumpkin pie before. So I wanted tomake it this one year. The recipe called for like 2.5 cups of pumpkin. I scoop out the guts of the pumpkin into a measuring cup and I only got half a cup. I said damn, didn't know I'd need 5 pumpkins to make pumpkin pie.
