I make my stuffing with Deland Bakery bread, toasted, dried out and then ripped to little pieces. I shred up the turkey liver into it, use the turkey broth, and add in some of my onion-garlic-pepper mush i make. Some Mc Cormicks poultry seasoning, sea salt and black pepper. I cook my stuffing seperate in the oven, not in the bird. My dad likes celery in it, but I HATE CELERY, so I shred and mince up some to give it a little flavor for him. My plans for potatoes are (1) double stuffed baked potatoes: bake potatoes as usual and then scrape out the insides and mix them in a mixer with a milk sub, butter sub, seasoning,etc and spoon the mixture back into the skins and cook a little longer. I make them up ahead of time and just heat up before serving. (2) sweet potatoes with marshmallows: cook potatoes until soft, remove skin and line in a baking dish top with butter sub, brown sugar and marshmallows. Heat until marshmallows melt. Guest guest Posted November 3, 2001 Report Share Posted November 3, 2001 Cranberry Relish 4 c cranberries 1 lg orange (rind and all) 2 c sugar Put through food processor or blender till smooth. Can add chopped walnuts. Let stand several hours. Waldorf Salad diced apples (leave skin on) half as much diced celery chopped walnuts Toss with Miracle Whip. Can add grapes. Lemon Meringue Pie 1 1/2 c sugar 5 1/3 T cornstarch 1 1/2 c water 3 egg yolks, lightly beaten 3 T butter 1/4 c lemon juice 1 1/2 T grated lemon rind 1 cooked pie shell (hope I can make a good one) Mix the sugar and cornstarch in saucepan (or bowl if microwaving). Gradually stir in water, cook over moderate heat until mixture thickens and boils stirring constantly ( I cook it 2 min at a time in the microwave, stirring between resetting, on high till it thickens and boils). Boil one min. Remove from heat, stirring till smooth and add the butter, juice and rind. Pour into shell. Cover with meringue and bake at 400 till delicate brown (about 8-10 min.) Meringue 3 egg whites 1/4 t cream of tartar 6 T sugar 1/2 t vanilla (optional) Beat the egg whites and cream of tartar till frothy. Continue beating egg whites, adding sugar 1 T at a time till stiff and glossy. Pile onto pie filling, carefully sealing the meringue onto the edge of the pie shell to prevent shrinking. Swirl or pull to points to make decorative. Bake at 400, cool gradually, in a slightly warm place, away from drafts. We're doing a deep fried turkey this year. These are surprisingly not in any way greasy, and very juicy. Don't know about stuffing yet. And we'll have sweet potatoes cooked with brown sugar and butter, mashed potatoes, rolls (hopefully can come up with good ones), green beans fixed with bacon and onions, microwaved broccoli with lemon juice. I'm going to try the pumpkin pie just listed by Lis. And some apple pie topped with a crumb topping (calls for 1/2 c butter, 1/2 c brown sugar and 1 c flour, maybe tapioca starch?) I know you said to roll it between plastic wrap, but the last crust I tried just crumbled away when I tried to get it off the plastic, how does this do? Guest guest Posted November 4, 2001 Report Share Posted November 4, 2001 I have never used any type of flour when I make gravy (cuz my mom never did ) which helps with this diet but cornstarch seems to work so much better and I think you always need a flavorful marinade and that just helps the process. I posted the turkey marinade and when I have a chance I will post a pot roast and fried chicken marinade and these are all passed down in my family and just thinking about them is making my mouth water. A turkey with a two-rice (reg.rice & wild) etc stuffing; mashed potatoes and gravy made gfcf with margarine or ghee and Darifree; sweet potato pudding (which is a lot like a crustless pumpkin pie, but made with grated sweet potatoes, Darifree or soy milk, eggs, etc), cranberry/pineapple/walnut gelatin mold, green vegetables and salad, sometimes popovers or other bread. For dessert, last year we had pie using the Gluten Free Pantry pastry mix, but I am not really crazy about pie and the sweet potato pudding (which I love) is quite pie-like, so I usually make a gfcf pumpkin cake roll with vanilla gfcf ice cream. > > It is getting about that time-so could each of us post a fovorite > dish for thanksgiving dinner?
