Guest guest Posted August 10, 2010 Report Share Posted August 10, 2010 Hi Mara, I have had a printout of your excellent directions for making coconut yogurt on my kitchen counter for many weeks. I finally got around to making it and found it to be surprisingly easy, especially with the help of an immersion blender. The part that puzzled me is that my coconut milk did not separate into layers. It was nice and creamy and emulsified. I did not shake it at all while it was fermenting. I just whizzed it really well with the blender after adding the gelatin. I guess I should be happy about that, but did I do something wrong? It's setting up in the fridge right now and I can't wait to try it later. It looks creamy and delicious . I'll let you know how it turns out. I just whizzed it really well with the blender after adding the gelatin. , I think you might have just hit on the secret to delicious coconut yogurt. An immersion blender!! I'm definitely trying that next time! Oh, and after you try it, let us know what the consistency is like. Mine is always like jello with a hard layer on top, and I'd love for it to actually be creamy! Guest guest Posted August 10, 2010 Report Share Posted August 10, 2010 Okay, so I'm happy to report that the yogurt was a success! It was absolutely delicious! No hard layer or separation. I could see a thin layer on top, but it wasn't any different in texture than the rest of the yogurt. I have three kids. The younger two could not get enough. The oldest, who is on the Autism spectrum, did not like the texture. He doesn't touch jello either. This is a little bit sad because I made to yogurt to wean him off his dairy yogurt. I had tripled the recipe, since we are a family of five and it seemed like a lot of effort for a small batch. My yogourmet yogurt maker jar was about three-quarters full. I added 6 packets of gelatin since Mara had suggested two for a third of the quantity of coconut milk I used. I think this was far too much. Next time, I will use only two. I like my jello to be a little on the soft side too, and this was WAY too gelatinous. Still yummy, though. judging by the creaminess of my coconut milk I may not even need gelatin at all. So, yeah, I think the immersion blender may have been key. I'm so glad I used it. I'm really excited about making a batch with less gelatin. I just hope we all tolerate it well. We'll find out tomorrow, I guess.
