I don't think i have more than a cup each - just got them at the farmers market yesterday. Also, what kind of impact would skipping the butter make? Allergic to dairy, and the amount of coconut oil would kill me with all the die off lol. I'm at a loss for any other butter substitutes... Thanks! Ellen > > Huckleberries would be so yummy! If I were going to make it without butter or coconut oil, then I would use 1 cup almond butter, honey, baking soda & salt. Or try 1 cup almond flour & 1/4 cup almond butter. The mixture I get when it's all mixed up with almond flour & butter is very similiar to almond butter anyway. If you try that, let me know how it turns out! And I think it would be really tastey with a blueberry-raspberry combo! The urging by a nutritionist to gain some weight might be the best thing thats happened to me in months! or the worst, lol. i'll just have to make sure i don't go crazy with it. Guest guest Posted August 12, 2010 Report Share Posted August 12, 2010 Hi, I ended up making a really delicious huckleberry and apricot cobbler and instead of the almond flour, I used ground (almost butter) pecans. It was really yummy - just finished off the last of it today. I've read somewhere that pecans and walnuts are easier to digest than almonds and cashews, so you might try that. Next, I'm going to try huckleberry and peach and maybe some blackberries. I love the idea of these cobblers for breakfast! Not anaphalactic, but still pretty bad. I've used margarine growing up. I used it pre-SCD but haven't tried it since it's so expensive and I live on a tight single parent income.
