My mother made a recipe last Thanksgiving that had cubed sweet potatoes, fresh cranberries and sliced Granny apples (no skin) all baked together with butter and brown sugar (we subbed Splenda and SF maple syrup). It was phenomenal! The hardest part was making sure the apples don't cook too much because they will get mushy faster than the potatoes or cranberries. They have what they call sweet potatoes but they are not exactly what we have back home. My grandfather used to bring me the best sweet potatoes I ever tasted that he grew on his farm. He grew tons of veggies. I think what they have here is a cross with regular potatoes because they are white inside. They just don't taste the same either...we make due I suppose. This is the original recipe, but be sure to see the tip at the end. An 18 X 24 sheet of heavy duty aluminum foil 4 med. sweet potatoes (1.5 pounds) peeled & cut into 1/4 inch slices 2 Granny apples cored & thinly sliced into rings 1/2 cup dried cranberries 1/2 cup packed brown sugar (can substitute Splenda & SF maple syrup) 3 TBS melted butter 1/2 tsp. ground cinnamon Heat oven to 450 degrees Center sweet potatoes, apples & cranberries on foil, sprinkle with brown sugar combine melted butter & cinnamon, and drizzle over the top Bring up foil sides, double over the top & sides, making one large foil packet, and leaving room for heat circulation. Bake for 25-30 minutes on a cookie sheet. Makes 5-6 servings. Tip: The apples will get mushy faster than the potatoes or cranberries, so you may have to experiment a bit with timing.
