Here is one of my favorite ways of preparing them: Slice circular sections perpendicular to the long dimension, about 1/4-inch. Heat several tablespoons of olive oil on a large flat skillet or pancake pan and place the potato slices in the oil over medium-to-low heat. Fry LIGHTLY to a golden brown, and I MEAN GOLDEN! Turn the slices over to brown the other side, and salt the cooked side lightly. Drain on paper towels IF YOU MUST, but heck, the olive oil is so good for us all . . . YUM!
