I'm wanting to get recipes for veg noodles and any other veg pasts. I know there are machines available, that will make noodle shapes but I'd like to get recipes for how to cook and server them. Guest guest Posted July 13, 2010 Report Share Posted July 13, 2010 I just put the noodles in the sauce the last few minutes of cooking or boil them for 2 - 3 minutes. If you boil them, remove immediately and place in an ice bath to stop the cooking process then serve with your sauce on top. I tried dehydrating zucchini noodles but that didn't work. Oh, if you overcook them, they will disintegrate. (I've only made zucchini noodles). Now, my eggplant dehydrated beautifully and was really nice in a lasagna. YUM!!! Also, I pulse cauliflower in a food processor until it reaches the consistency of rice or couscous. I then cook it in a pot over medium heat with no added liquid uncovered stirring often until slightly browned. You could probably bake it or dehydrate it but I haven't tried that yet. Buttered cauliflower rice and beans is so good. Guest guest Posted July 13, 2010 Report Share Posted July 13, 2010 Hi Bob, I've cooked the " ZOODLES " (my nickname) for the Zucchini pasta. I just use the vegetable peeler and heat up some coconut oil in my iron skillet, then drop in a dab of butter. I basically fry them on low heat until they are cooked but not mushy. As I stir them they tangle into a nice blob that I can pour my spaghetti sauce onto. They're not pasta, but they're the next best thing! I also cooked some cauliflower fried rice this morning using the grater to make the " mock rice " . That was really good also, even though I missed having the soy sauce. Next time I'll use my food processor to save time. I was so tired of just eggs for breakfast. The recipe made enough for at least three mornings and that is also a good thing.
