Guest guest Posted July 8, 2010 Report Share Posted July 8, 2010 Hi Pam: I haven't tried these because of Almond Flour intolerence, but I plan on it one day. http://www.scdiet.org/2recipes/bread01.html Cinnamon-Raisin Twist Bread Using the Lois Lang bread recipe on page 101 in BTVC: Flour the countertop with almond flour Using wet hands press the dough into a rectangle about 1 cm thick, in order to fit the loaf pan when the dough is rolled up. Generously dust the flattened dough with cinnamon Add a handful of raisins, more or less as desired. Roll up the dough This way the cinnamon is not dispersed throughout the loaf, but looks more like a cinnamon bun when cut. Always remember to grease AND flour the loaf pan or it will not rise. > bread Soft Cinnamon Raisin Bread 3 1/2 cup almond flour 3 eggs 1/4 cup melted butter 1 tsp baking soda 1 cup yogurt (homemade) 1/4 tsp salt 3/4 cup honey 2 tbl cinnamon 1/2 - 3/4 cup raisins Directions: Mix together in food processor, adding raisins at the very end. Put in buttered loaf pan and then bake at 350 degrees (175 C) for 45 minutes. Let it cool completely before removing from pan. ------------------------------- Added by Sandy I changed mine to 2 1/2 cups almond flour and only three tablespoons butter. I used 4 pans that are 3 by 5 inches. If you use these, lower the baking time. Or use two of the bigger pans because it raises up while cooking and will run over. I like to slice mine , put natural peanut butter on the top, warm in the microwave. I added a ripe banana and it came out good both times. I have found that baking the breads in the mini loaf pans works better as far as getting done clear through. You do have to shorten the baking time. Beat together eggs, honey, and oil or butter. Add salt, soda, cinnamon and vinegar and mix well. Stir in flour, nuts and currants to make a fairly stiff dough. 2. Drop by large spoonfuls in 12 globs on a baking stone or on cookie sheets that have been lined with parchment paper. Flatten each scone a little with a wet silicone spatula or wet fingers. 3. Bake 20-30 minutes at 325 until nicely browned, firm when inserted with a toothpick, and hollow sounding when tapped. Cool on racks. Notes These keep well at room temperature for at least a week. And you know what? Pre SCD I was always disappointed with cinnamon rolls. They smell great but don't necessarily taste as good as they smell. These? These taste better! Note though - the honey top (well, it becomes the top once you flip it over) will eventually harden. It was entertaining for us because there was a challenge to getting another roll but by the end of the night it was ALL GONE! And I was the only SCD person there. Guest guest Posted July 10, 2010 Report Share Posted July 10, 2010 My main issue was that the topping ran to the sides and bottom and when the paper cup is removed most of it comes off. I think what i will do next time is add just a little of the batter to the topping to thicken it and also swirl it a bit when i pour it on. Also, i plan to substitute clarified butter for coconut oil in one of the two components, probably the topping. I also made the other recipe from Heal-Balance-Live tonight but haven't tried them yet. Guest guest Posted July 11, 2010 Report Share Posted July 11, 2010 ok, update- these are UNREAL. this is by far the best baked SCD item i have ever had. they are so close to real cinnamon buns i cannot believe it. they kind of break apart like monkey bread if you have ever had that since you first roll the ball individually and then smoosh together. the topping gets soaked into the bread and they are incredibly moist. the only possible adjustments i would make is more nuts and possibly changing to walnuts or mixing walnuts and pecans. also i would possibly use coconut flour in place of the almond flour in the spice mix either entirely or partially. i cannot stress enough though how good these are. Pre-SCD, I used to eat the Pillsbury ones for breakfast all the time (not as good as my grandma's homemade, but still tasty). I think I need to make these babies sometime this week :-). Was thinking would be neat for a place to go out to eat that was legal healthy foods!!. Maybe could pay a someone 1 week to make a few things to look forward to. But my biggest complaint about the topping and the cake itself is there is nearly enough topping for my tastes, nor enough cinnamon. So I added cinnamon to the batter. I think I may be the only onehere who didn't love them - way too sweet for me - and better as awinter comfort food than summer, imo. Whereas I love her blueberry muffins and now I see she has a blueberry crumble as well. Also - I may just like savory better than sweet at the moment - but her rosemary almond flour crackers remain absolutelyawesome. Perfect summer food (I tweak by adding equal fresh garlic as the rosemary.) And everyone here (non SCD folk) likes them. Too much. LOL! But my biggest complaint about the topping and the cake itself is there is nearly enough topping for my tastes, nor enough cinnamon. So I added cinnamon to the batter. I love the taste (and smell) of rosemary, and I grow it in my herb garden; but after trying Elana's lemon-lavendar cookies, which were awful, in my opinion, I was afraid to try these. (I love the smell of lavender; eating it is another matter!) Granted, rosemary's not lavender, but I'm not generally keen on herb bread/cracker kinds of things -- though I use regularly use herbs in cooking. n ______________________________A funny, touching gift book for cat lovers. Next time I'll include the additonal 1 T, like the original recipe. They were great! Next time I'll also divide the dough in half and bake in two batches. I wasn't able to get it thin enough using all the dough on one oblong cookie sheet. I put the dough directly on the cookie sheet and put the parchment on top and rolled it.
