Guest guest Posted July 21, 2004 Report Share Posted July 21, 2004 Although I have not had the surgery yet. I do have a way of cooking chicken to keep it moist. Maybe this will work for you too. I generally marinade my chicken in one of the Lawry marinade sauces overnight. As Janet said these are really good, low or no fat, no or low carb. Prior to marinating I will lightly rub light virgin olive oil on it. I will season it with fresh ground black pepper and a little fresh ground (sea) salt. I put it in a ziploc bag overnight. When I get ready to cook it. I put it in tin foil but I don't fold the foil all the way. I seal it on top but leave some room between the chicken and the top of the folded foil the I fold in the sides. That pocket of air steams the chicken. After about a half hour the chicken is cooked but I will take it out of the foil and for about 5 minutes, lightly brown the outside either in a pan or on a grill. The chicken is really tender and juicy. It has a nice taste from the marinade. Sometimes I will cut up a fresh lime and add some vegetables. It really works steaming everything together and gives the chicken a great taste. You are welcomed to try it.
