I have been making my own peanut butter since my early

days on SCD. I usually purchase peanuts that are roasted in the shell,

shell them, throw them in my food processor with a bit of salt, and start

processing. I rarely need to add any oil. But it can take 10 to 15

minutes of processing in my food processor (Cuisinart) before the nuts turn into

butter. I run the processor for about 5 minutes, then let it rest for 5 minutes

or so to let the motor cool down, then repeat as needed until the butter is the

right consistency. I do keep the peanut butter in the fridge, so the oils

usually don’t separate out, although it isn’t a problem to stir

again.

It all depends on your digestion.

One of the first non-intro recipes I ever posted was my broccoli and

cheese pie. People were stunned that I was chowing down on BROCCOLI

in the first six months I was on SCD. Because, a number of people said,

it was so HARD to digest. My system liked it fine.

Considering how sensitive Kim's digestion is, the fact that she tolerates

some peanut butter indicates that for some people, it is not hard to

digest.
