I usually purchase peanuts that are roasted in the shell, shell them, throw them in my food processor with a bit of salt, and start processing. I rarely need to add any oil. But it can take 10 to 15 minutes of processing in my food processor (Cuisinart) before the nuts turn into butter. I run the processor for about 5 minutes, then let it rest for 5 minutes or so to let the motor cool down, then repeat as needed until the butter is the right consistency. One of the first non-intro recipes I ever posted was my broccoli and cheese pie. People were stunned that I was chowing down on BROCCOLI in the first six months I was on SCD. Because, a number of people said, it was so HARD to digest. My system liked it fine.
