Question about yogurt

Hi, I am trying to make SCD yogurt, and I have a question. I bought the

Yogourmet Freeze-dried yogurt starter, and when I got home I realized it

said " Refrigeration is recommended. " The store I bought it from,

though, did not have it refrigerated. Does that make a difference, or

should I return it and buy elsewhere?

I thought I had answered your question, but maybe from a different list? Anyway, it is supposed to be refrigerated, so I would take that back and inform the store. Hi Marcia,I buy the yogourmet yogurt starter too. Funny, I never noticed the " refrigeration is recommended " statement. Every store I buy this at stores it on the shelf at room temperature. When I store it at home I store it in the cupboard at room temperature. And so far (after 5 months) I've never had a problem with my yogurt. In my experience, I'd say your starter is fine and you can use it as is.

I'd return it, too. When I got mine from Lucy, she said that if you are

just going to go ahead and use it pretty quickly it would probably be OK

in the cupboard but since most people buy enough to last awhile it really

should go in the frig. And you have no way of knowing how long it was

sitting on a shelf in the store unrefrigerated.

Thanks for the answers. I think I will return the starter and order from Lucy's

Kitchen just to be on safe side.
