Hi Bob, I can't have eggs right now either.

Here is a recipe for muffins.

2 cups nut flour

2 ripe bananas

4 tsp honey

4 tsps gelatin

4 tbps coconut oil or butter

dissolve gelatin in 1/2 cup hot water. mix all ingredients and put in muffin

paper cups in muffin tin. bake 380 degrees for 15-20 minutes.

I actually just had an epiphany the other day after making some cookies: all the SCD recipes for cookies and muffins are essentially the same, except muffins usually have eggs and no oil while cookies have oil and no eggs. So, I think you could probably find a good number of cookie recipes, at least with almond flour, that don't use eggs. Hey Bob, if you check out the pecanbread recipes they have some egg free almond

flour recipes. But there are only a few. I'm curious to see what others will

say in response to this topic too though b/c I'd like to bake stuff but I can't

use eggs at the moment.

Depends on what you are baking. Some people find that they can substitute

cooked fruit for the eggs, or cooked vegetables. You can take

a look at the egg-free recipes on Pecanbread -- I'm afraid I'd fall over

without eggs!

When you have healed further, you may find that you can use duck or goose

eggs. Lots of people who are sensitive to chicken eggs tolerate these.

Another thing to look into is non-soy fed chicken eggs, which can be

difficult to find.

There are others who are intolerant of eggs who will find this

information useful.
