So go ahead and enjoy the ice cream with frozen bananas. You've got some nice family members that include the scd for you!! But what I wanted to know is if you took a ripe banana and froze it, does that some how break down the starches? I believe this is what my aunt thinks will happen, but I'm nervous that her assumption is not fact. Just get ripe bananas and then peel them, put them on a cookie sheet or something similar and put in the freezer. When they are frozen put them in a plastic bag and you always have some ready that way. I do bunches at a time. then I have some for ice cream or defrost some for banana muffins. In fact I make sure I have a good supply of them to tide me over for the times there simply are not any ripe ones anywhere. I make banana ice cream all the time(sometimes by itself, sometimes with berries or apricots or....) in the blender. It may or may not need a couple spoons of juice or water to get blend right but it is delicious soft ice cream. I don't really see why your aunt would want to use unripe bananas anyhow; they wouldn't have a nice sweet flavor. Unripe!!! Sorry, typo.
