I made this pie last night. I had strawberries that were close to going bad. It was easy to make and firmed up very nicely! What I'm wondering is if I could freeze it? I certainly don't want to eat the whole pie by myself in the next couple of days and my hubby doesn't like coconut. I have never frozen anything with coconut oil in it - that would be the question - is if that freezes and thaws OK??

How did it taste?Seems like a lot of coconut oil to me. which coconut oil did you use - with flavor or flavorless?I bet you could do it with some coconut oil and some gelatin - if you didn't want it to be quitethat rich. It is very good - it's hard to imagine that those filling ingredients make a firm pie when chilled! I can tell though that I won't be able to eat a lot of this at a time! It's very rich and heavy - I think because of the coconut oil. That's why I'm hoping I can freeze it! My coconut oil is just spectrum - so I guess it's flavored??

Thanks Marla. I bet you could freeze it. But maybe try a small piece and see how it works out first,just in case. Otherwise you are stick eating it all now!! <vbg> MaraIt is very good - it's hard to imagine that those filling ingredients make a firm pie when chilled! Would it be possible to skip the cashews or maybe use another nut butter?

I like Mara's suggestion of trying to freeze one piece first. I put coconut oil

in my coffee sometimes and then I'll put the coffee over ice. That oil balls up

so fast! So I am wondering just what it will do when frozen and rethawed.

Hopefully nothing since it's not facing an oil vs. water scenario...

You can always share the rest of your pie with me :)

I've made a couple of raw recipes that are very similar. The flavor isn't one

that I really enjoyed at first but it seemed like I enjoyed it the more I ate

:). Perhaps my taste buds just had to get used to it. It freezes just fine.

Just make sure that you let it thaw for a bit before you decided to cut into it

for a slice later.

Alyssa- would you believe that we only live about 30 minutes away from each

here's what I sent to Alyssa:

Cheezee Kale Chips:

Ingredients:

2 Bunches of Kale

1 1/2 Cups of Cashews

3 to 4 Cups of Red Bell Pepper

1/8-1/4 Cups of Lemon Juice (you can also add as much lemon juice the mixture

until it tastes like a cheese)

Pinch of crystal salt

Preparation:

Put all of the ingredients (except the kale) in the food processor until it's

really smooth and not chunky. Get some fresh kale, rip it into chip size

(without the stem), toss the mix with the kale. Then, when you're done, put the

kale on mesh trays on the dehydrator. Put the dehydrator on 145 for 1 hour only,

it won't destroy the enzymes, then after that hour, put the dehydrator on 105 or

110 for 6-8 hours or until crispy. Then it's all done!

No Nut Kale chips

1 bunch of kale torn into " chips "

Then 1 tablespoon of olive oil of poured over kale chips and toss with your

hands.

In a little cup I mixed

1/4 tsp onion powder

1/4 tsp chili powder (Marilyn's recipe)

1/4 tsp garlic powder

1/4 tsp basil

pinch cayenne (I do a REALLY SMALL pinch b/c I'm spice sensitive)

pinch of cumin

Mix the seasoning mixture before you sprinkle it over the kale chips and toss

with your hands.

Dehydrate until crispy and enjoy

Sun-Dried Tomato Tortilla Chips

To me they taste JUST like doritos when spread *thin*

Ingredients

* Stems from one large head of broccoli (this is great b/c I steam the florets

and use the stem for this recipe - nothing wasted!)

* ½ cup cashews

* 10 sun dried tomato halves (soaked at least 1 hour)

* 3 cloves garlic

* 1 dash sea salt

* 1 dash cayenne pepper

* 1 dash cumin

* ¼ cup sesame seeds

Preparation

1. Chop broccoli stems (should be about 2 cups) into small pieces.

2. Blend all ingredients, except sesame seeds, in food processor until they form

a paste.

3. Add sesame seeds to food processor last (so they don't get broken up too

much) and process just until mixed. Taste the mixture, and add more salt,

cayenne, or cumin if you want. I actually added a few more pinches of cumin to

mine!

4. Spread thinly onto dehydrator sheet, and run a knife through the paste to

form triangles, so that the chips will easily break into triangle shapes later.

5. Dehydrate until they are stiff enough to lift off the sheet easily, break

into triangles and flip over, and dehydrate until crispy. (I dehydrated mine at

110 for 17 hours, flipped them, and then dehydrated `em for another 5 or so)

Fake Cheese (raw food, real world)

1 1/2 cup chopped red bell pepper

3 Tbsp lime juice

1 1/2 tsp salt

1 1/2 cup macadamia nuts (or walnuts or cashews)

Blend pepper, juice and salt. Pulse nuts briefly separately. Pour pepper

mixture over nuts and process until combined but chunky. Can add some garlic if

desired. Spread 1/4 inch thickness and dehydrate at 115 degrees for 4-6 hours

or overnight. Once the top has dried break it and flip the pieces over.

Dehydrate at least another 1 - 2 hours.

Blondie Macaroons (adapted from Raw Food, Real World)

3 cups coconut flakes

1 cup honey

1 1/2 cup almond flour

1/3 cup coconut butter (it's either 1/3 or 1/4)

1 Tbsp vanilla

1/2 tsp salt

Blend everything (MUCH easier to blend if you heat up the honey and coconut

butter) and ball into spoonfuls. Dehydrate @ 115 degrees overnight or until

crispy on the outside and soft in the middle.

Ok - the pie freezes and thaws fine. I just decided though that it's probably not my favorite dessert. AND, I've had D problems all week. I really only ate 2 pieces of the pie so I don't think that's the culprit...but who knows!!

Marla,

Your D could very well be from just two pieces of pie. It has a lot of

potentially

problematic ingredients for those who are sensitive. Cashews, coconut, seeds

from the strawberries. Or sometimes it's the combination of several hard to

digest ingredients even though they don't cause problems individually.
