What I'm wondering is if I could freeze it? I certainly don't want to eat the whole pie by myself in the next couple of days and my hubby doesn't like coconut. I have never frozen anything with coconut oil in it - that would be the question - is if that freezes and thaws OK?? I can tell though that I won't be able to eat a lot of this at a time! It's very rich and heavy - I think because of the coconut oil. That's why I'm hoping I can freeze it! My coconut oil is just spectrum - so I guess it's flavored?? I put coconut oil in my coffee sometimes and then I'll put the coffee over ice. That oil balls up so fast! So I am wondering just what it will do when frozen and rethawed. The flavor isn't one that I really enjoyed at first but it seemed like I enjoyed it the more I ate . Perhaps my taste buds just had to get used to it. It freezes just fine. Guest guest Posted June 18, 2010 Report Share Posted June 18, 2010 ::chuckles:: Misty, I'm pretty sure they're all in the FB discussion but okay, here's what I sent to Alyssa: Cheezee Kale Chips: Ingredients: 2 Bunches of Kale 1 1/2 Cups of Cashews 3 to 4 Cups of Red Bell Pepper 1/8-1/4 Cups of Lemon Juice (you can also add as much lemon juice the mixture until it tastes like a cheese) Pinch of crystal salt Preparation: Put all of the ingredients (except the kale) in the food processor until it's really smooth and not chunky. Get some fresh kale, rip it into chip size (without the stem), toss the mix with the kale. Then, when you're done, put the kale on mesh trays on the dehydrator. Put the dehydrator on 145 for 1 hour only, it won't destroy the enzymes, then after that hour, put the dehydrator on 105 or 110 for 6-8 hours or until crispy. Then it's all done! ----------------- No Nut Kale chips 1 bunch of kale torn into " chips " Then 1 tablespoon of olive oil of poured over kale chips and toss with your hands. In a little cup I mixed 1/4 tsp onion powder 1/4 tsp chili powder (Marilyn's recipe) 1/4 tsp garlic powder 1/4 tsp basil pinch cayenne (I do a REALLY SMALL pinch b/c I'm spice sensitive) pinch of cumin Mix the seasoning mixture before you sprinkle it over the kale chips and toss with your hands. Dehydrate until crispy and enjoy ----------------------- Sun-Dried Tomato Tortilla Chips To me they taste JUST like doritos when spread *thin* Ingredients * Stems from one large head of broccoli (this is great b/c I steam the florets and use the stem for this recipe - nothing wasted!) * ½ cup cashews * 10 sun dried tomato halves (soaked at least 1 hour) * 3 cloves garlic * 1 dash sea salt * 1 dash cayenne pepper * 1 dash cumin * ¼ cup sesame seeds Preparation 1. Chop broccoli stems (should be about 2 cups) into small pieces. 2. Blend all ingredients, except sesame seeds, in food processor until they form a paste. 3. Add sesame seeds to food processor last (so they don't get broken up too much) and process just until mixed. Taste the mixture, and add more salt, cayenne, or cumin if you want. I actually added a few more pinches of cumin to mine! 4. Spread thinly onto dehydrator sheet, and run a knife through the paste to form triangles, so that the chips will easily break into triangle shapes later. 5. Dehydrate until they are stiff enough to lift off the sheet easily, break into triangles and flip over, and dehydrate until crispy. (I dehydrated mine at 110 for 17 hours, flipped them, and then dehydrated `em for another 5 or so) -------------------------------- Fake Cheese (raw food, real world) 1 1/2 cup chopped red bell pepper 3 Tbsp lime juice 1 1/2 tsp salt 1 1/2 cup macadamia nuts (or walnuts or cashews) Blend pepper, juice and salt. Pulse nuts briefly separately. Pour pepper mixture over nuts and process until combined but chunky. Can add some garlic if desired. Spread 1/4 inch thickness and dehydrate at 115 degrees for 4-6 hours or overnight. Once the top has dried break it and flip the pieces over. Dehydrate at least another 1 - 2 hours. ------------------------------------- Blondie Macaroons (adapted from Raw Food, Real World) 3 cups coconut flakes 1 cup honey 1 1/2 cup almond flour 1/3 cup coconut butter (it's either 1/3 or 1/4) 1 Tbsp vanilla 1/2 tsp salt Blend everything (MUCH easier to blend if you heat up the honey and coconut butter) and ball into spoonfuls. Dehydrate @ 115 degrees overnight or until crispy on the outside and soft in the middle. AND, I've had D problems all week. I really only ate 2 pieces of the pie so I don't think that's the culprit...but who knows!! It has a lot of potentially problematic ingredients for those who are sensitive. Cashews, coconut, seeds from the strawberries.
