Guest guest Posted June 28, 2010 Report Share Posted June 28, 2010 I was thinking about using crepes to make a chicken and cheese quesadillas in the skillet but wondered what would happen to the crepes since they've already been 'cooked" once? So between each layer they put something different (chicken, 'refried' beans--use black or kidney beans, etc.) and top it off with a poached or lightly fried egg on top. You could do cooked versions and reheat in the oven. For a non-cooked version, use pre-cooked or no-cook items like guacamole or pre-cooked chopped chicken, lettuce,etc.. It's more like a salad. The recipe I have uses a small amount of almond flour but I would need a larger pan or more practice to get it thin enough to be a tortilla. Debbie 41 cd What recipe do you use for the tortillas? They are great as sandwich wraps - just had some tuna salad on one today! I cook mine in a 9 inch skillet - they are kind of small. I should try a bigger skillet for giggles - never thought about it! Guest guest Posted June 29, 2010 Report Share Posted June 29, 2010 A while ago when I was doing intro/stage one foods and didn't have any problem with eggs I'd just take a bunch of eggs, mix them up (maybe with a little honey and/or vanilla) and then pour them thinly into a small pan (took a little practice to get the right spreading motion). Cook on one side and then gently separate it from the pan and flip to cook the other side. Voila! Crepes for stage one! They were great with a little cinnamon and honey or plain and cut thinly to be used as noodles for the soup (mind...they have to be kept separately until you're actually going to eat it because otherwise they just disintegrate. " were you referring to crepes or an actual tortilla recipe? I make the SCD tortillas -- regardless of what I'm making them out of -- in advance. I put a paper towel, and a tortilla, and a paper towel, and a tortilla and so one, and then keep them warm.
