I was thinking about using crepes to make a chicken and cheese quesadillas in the skillet but wondered what would happen to the crepes since they've already been 'cooked" once? I wondered if they would just burn?? Anyone tried this?

Purchased tortillas have also been " cooked, " so re-cooking SCD

tortillas shouldn't be a problem.

I'm generally trying to get multiple plates on the table, so I make the

SCD tortillas in advance, assemble, and then re-heat everything in the

oven.

Marla--There's a restaurant here that does enchiladas vertically.  So between each layer they put something different (chicken, 'refried' beans--use black or kidney beans, etc.) and top it off with a poached or lightly fried egg on top.  You could do cooked versions and reheat in the oven.

 

For a non-cooked version, use pre-cooked or no-cook items like guacamole or pre-cooked chopped chicken, lettuce,etc..  It's more like a salad.

 

The recipe I have uses a small amount of almond flour but I would need a larger pan or more practice to get it thin enough to be a tortilla.

I use the grain free gourmet cookbook crepe recipe and LOVE them (has some almond flour too). They are great as sandwich wraps - just had some tuna salad on one today! I cook mine in a 9 inch skillet - they are kind of small. I should try a bigger skillet for giggles - never thought about it!

The vertical enchiladas sound yummy!

How do you make SCD crepes? I'm still at Intro/stage 1, so I'm sure they're a long way off for me, but I'd love to know for future reference!misha

The one I use is from a cook book so I probably shouldn't post it but it is similar, only I use almond flour.

A while ago when I was doing intro/stage one foods and didn't have any problem

with eggs I'd just take a bunch of eggs, mix them up (maybe with a little honey

and/or vanilla) and then pour them thinly into a small pan (took a little

practice to get the right spreading motion). Cook on one side and then gently

separate it from the pan and flip to cook the other side. Voila! Crepes for

stage one! They were great with a little cinnamon and honey or plain and cut

thinly to be used as noodles for the soup (mind...they have to be kept

separately until you're actually going to eat it because otherwise they just

disintegrate.

I've made several kinds. Some with bean paste and eggs, some with nut

flour and eggs, and some out of souffle bread.

I make the SCD tortillas -- regardless of what I'm making them out of --

in advance. I put a paper towel, and a tortilla, and a paper towel, and a

tortilla and so one, and then keep them warm. Then I can assemble all the

meals at once.
