Welcome to the group!

It's good that you do eat cheese and yogurt. Have you considered quality

eggs, as well?

I know there are folks on the list who are mostly vegetarian. I'd never

make it as one... I'm an omnivore from head to toes!

Hi Bob,

I'm a mostly vegetarian myself. Basically I'm a pescatarian. I've been

vegetarian for most of my life and I think my body is used to working on a plant

based diet. I started eating fish to increase my protein intake - if you can -

I'd suggest you do the same.

What I eat really varies from day to day. The biggest changes in my diet has

been a big increase in the amount of eggs and of course no (wheat) bread (in all

its forms).

Breakfast is usually some form of eggs: Eggs over easy, poached, omelets,

scramble. I throw in some veggies to switch it up. Generally have avocados on

the side. I also make muffins with almond flour every once in a while that last

me a week or so. My current favorite is the muffin recipe in BTVC using yogurt

and blueberries. Smoothies are great breakfasts on the go.

Lunch frequently is soup (butternut, broccoli, mushroom etc etc etc) or salad

or leftover dinner. If you want to make a creamy soup - use tahini sauce or SCD

yogurt.

Dinner - I'm all over the place. One tip: Steamed cauliflower (cut into really

small chunks) is a good substitute for rice or couscous. Also - try making

multiple vegetable dishes to make the meal seem more " complete " . (This is where

cooking in bulk comes in handy)

Snacks: Apple + cheese; Almond crackers; Yogurt with fruit; dates; lara bars;

celery with peanut butter; dried nuts and fruits

I've started putting some of my recipes online at http://flipcookbook.com. Most

of them are vegetarian.

Note: Some things are considered advance - like lentils or nuts.. so proceed

with caution.

I follow Raj on Twitter and the recipes posted look great. I can't wait until I

have a chance to try them.

I have a problem with all nuts but red lentils. They don't seem to bother me at

all. Be very cautious with them. I really would like to be able to tolerate more

beans in my diet.
