you should.describe your methodI made my first attempt at making coconut milk. I used 1 ½ cups shredded coconut and 3 cups water and ended up with just under 1 ½ cups of coconut milk? Does this seem right? I thought I would get more coconut milk.

Hi ,

Did you strain out the coconut through a dishtowel or clean

handkerchief-lined colander? If so, you must gather the edges of the cloth and

squeeze the livin’ daylights out of it to extract all the coconut milk.

You should get about the same amount of coconut milk – 3 cups.

It takes a lot of squeezing though!

I followed Sheila’s directions from our group files, which

called for straining the coconut milk through a large strainer, then a small

one (I lined the strainer with a coffee filter).    Apparently the part I

missed was using cheesecloth to wring the milk out of the pulp, as Carol has

pointed out.  I will have to try this again and see if I can improve.  The

coconut milk tastes really good, but the yield seemed so low.

I am trying to figure out how to make enough coconut milk to make

into yogurt.  I use the Yogourmet, so to fill it I would need a half gallon of

coconut milk, or about 8 cups. 

How much shredded coconut and water should I use to get 8 cups

of coconut milk?  It seems like it would be a lot to handle in one batch.  Do

you recommend breaking it into two smaller batches?

Thanks, Carol.  I completely missed the part about using

cheesecloth or a handkerchief to wring the milk out of the pulp.  I will have

to try this again.

If the coconut is finely shredded then I find I need less, say

5-6 cups per 8 cups water. If the coconut is in large shreds I use more - up to

8 cups per 8 cups water. Reason being is that the finely shredded packs more

densely than the larger shreds. I guess you’ll have to experiment!

I would put the coconut & water (maybe use 8 ½ cups water)

in a large pot, bring to a simmer, let cool awhile, then process it in 2

batches in a blender. Then strain.

Others may have other suggestions…
