I usually put baking parchment around the food and then seal with a layer of foil around that, especially when reheating food in the oven. Guest guest Posted June 2, 2010 Report Share Posted June 2, 2010 That's how I would grill fish using foil because otherwise it starts falling apart even though it may not be cooked enough for me. I do it in a pouch style with oil/herbs like you mentioned off direct heat. They do have fish basket-type things and meatball basket type things--shaped like fish or meatballs to use on the grill. I just don't know if you could retain the juices but I haven't tried either. Karianne, If you have a concern about the aluminum, I would wrap the fish in some parchment and then put it in the foil for baking. There is actually a dish served here in New Orleans called pompano en papillote which is fish cooked in a creamy seafood sauce in a " paper bag " made of parchment. Guest guest Posted June 2, 2010 Report Share Posted June 2, 2010 Karianne,I suppose you could cook in those, but if I am correct (and I have a weber grill) those are drip pans. They are designed to catch the drips from the cooking meat so that there is less grease and gooey build up on the inside of the grill and they go under the cooking grill, usually between the baskets and used when cooking with indirect heat (versus straight over the coals).I think there are special pans/baskets that are used for fish, even cedar planks soaked in water and then used as a cooking surface on top of the cooking grill.
