Intended to have as leftovers, but they never did last long enough. On most recent trip, I made some and froze and brought along, so I had treats. I did use pecan meal, rather than grinding from whole. Came out denser, bec in effect 'twas too much pecans. four cups of pecan ground doesn't produce four cups of ground pecans! I shoulda known. They were ok, but not to die for. hope de-prednisone-ing goes well. Guest guest Posted July 6, 2010 Report Share Posted July 6, 2010 Alyssa, I haven't tried waffles, but pancakes might be a whole lot easier even if you did have a waffle iron. I'm remembering when I was growing up and my brother was allergic to wheat, eggs, and dairy. Mama made him " waffles " by putting his rye bread in the waffle iron. No matter how much she oiled it, she was always scraping. Basically it ruined that waffle iron! This recipe sounds fantastic! Do you think they'd work as pancakes?
