To the best of my knowledge, no, there aren't any legal coconut milks

that are commercial.

There used to be, but then they started putting guar gum and carrageenan

and other junk on them to make them " thicker " and

" richer, " ie, so they could use less actual coconut.

If you find one which you think is legal, you can post the ingredients,

and we'll tell you what we think. THen you write the company and verify,

in writing, on the company letterhead, that the item in question contains

no illegals. THen we can post it to our library.

I don't think many on this list would approve, because I haven't gotten an official letter from the company as is recommended when trying to "legalize" an prepared product... however, based on the information on their website, regarding their coconut milk products, I personally am comfortable using the "natural value" brand coconut milk. They emphasize that they do not use any fillers or stabilizers and that they very much want their product to contain only coconut and water. You can do a simple google search yourself to see what you think about that company... I also love that it is organic! Good luck! I would love to make some more thai-inspired foods. One of my favs is a coconut-curry chicken soup. I haven't made it since going SCD b/c I can't stand having to make homemade coconut milk. So, my question is - are there any legal canned or "off the shelf" coconut milks? If I find one that says it contains only coconut and water (such as Trader Joe's light coconut milk)?

You may be comfortable using this product, but, just because something is

organic does not mean it is SCD-legal.

I ask that people get letters for a reason... because this is what Elaine

required when she was alive.

Perhaps it's paranoia on my part, but I was sick for so long, and told it

was all in my head, and that if I would just stop stuffing my face and

lose some weight, " it, " whatever the problem at the moment was,

would all clear up.

SCD solved that. I have seen so many sneaky methods of getting around the

ingredients regulations that I want to scream. I have also learned,

through painful experience, that short-cuts -- like using a canned

coconut milk that LOOKED legal -- aren't really.

So please, if you consider this product to be SCD-legal, take the time,

do your fellow listers a favor, and take the time to get a letter

verifying the product that we can put in our library.

Marilyn -I completely understand why the the list requires the letter from the company. It IS the only way to be SURE that a product is legal... nevertheless... as this example illustrates, even if a company is convinced that everything is good - things can happen. I also didn't, in any way, mean to indicate that "organic" products are universally scd-legal. It was simply a side-note to the rest of my comment. Additionally, I thought that I made it abundantly clear that what I was saying about this product was a PERSONAL opinion that I was simply offering as a lead to someone else, as I HAVE used this particular product for some time without any problems. Here is my question... should I have not made this post? I find information such as this very helpful when it comes from others, and tried to be really clear that I was not declaring canned coconut milk (or organics) as legals.... People need to be able to make their own decisions about things, AND at the same time I understand that there are people who might have read my post and mis-understood it.... So, what to do. Here's my thing about the universal "make it yourself" rule... some of us have extremely stressful, difficult lives, juggling jobs, children, housework AND illness. The added stress of having to make everything yourself can really derail progress and devotion to the diet (at least I have found this to be true for me personally). It may be a "small victory"... but for me, finding the Natural Value write-up on their coconut milk product was nearly a god-send... I found my shoulders relaxing just a little bit as I though to myself 'wow - maybe I won't have to make my own coconut milk anymore...'.... I know it sounds silly, but over time, the effort involved in all the cooking really takes it's toll on me. I am not advocating that someone ignore BTVC's guidelines for prepared products, just that we use our minds to do the research and proceed with caution. In some cases (mine) the effort involved to contact the company is a bit daunting. Especially as I am barely able to keep it together on a day-to-day basis at times... So, what is your recommendation? I will keep quiet on future similar posts, but personally, really appreciate when other people provide similar information. But, they still don't have any ready for sale so if you go to Amazon or another

vendor, you might get the bad stuff that didn't get pulled since there is no new

stuff out there.

Actually, the Organic one has illegal junk in it. Only the Natural one " appears "

to be legal (if they get their problems straightened out).

This is also a good lesson in reading the ingredients every time you purchase a

food or supplement, even if it was legal in the past. You never know when they

may go and change the ingredients on you (the coconut milk below did correctly

state in the ingredients that it had guar gum in it).

Has anyone tried the frozen shredded coconut next to frozen fruit (Kroger where I live and it's the only place I've seen it).  Ingredients:  coconut.  Decent price.  Not sure on amount but it's not a very big package.  That doesn't seem like it would take long to simmer, blend, strain, have milk.

I don't know when this "issue" with the tainted coconut milk was... but I have been using this brand for years, and they have since changed the color of their label from red to purple. Look - I didn't mean to offend anyone - I just find it interesting that there may be foods out there that can simplify our lives.... That being said... this company DOES seem to vary from having no additives to having additives.... so I guess you have to check labels - or not use it at all. In any case, the reason I know it varies, is cuz I just checked the case I bought, and it says it has guar gum... so - here I am, eating my words... ugh! Just when you think a company is doing something reputable by "resolving" an issue, and posting on the internet that it has been "resolved" this comes up! Ugh! I don't think anyone's offended. And certainly, every single one of us

would like to find things which can make life easier for us.

I'm sure everyone just about fell over with delight when the letter for

Cento tomatoes was posted, because I can tell you from personal

experience that peeling, seeding, and cooking down a couple of hundred

pounds of tomatoes for sauce is seriously NOT entertaining! (That the

sauce from those tomatoes was lost due to Hurricane Katrina STILL

hurts.)

But your experience, where, with even the best of intentions on the part

of the distributors of this coconut milk, there were illegals in the

commercial product, demonstrates clearly how scrupulously careful we have

to be. It also demonstrates how widely spread the adulteration of our

food products has spread, when Thai coconut milk makers assume that

people want it CHEAPER, regardless of what you have to put into the

product to make it that way.

My goal is to cook healthy and NOT spend my life in the kitchen! But I

absolutely won't let convenience take me back to the horrid shape I was

in when I began SCD.

Trader Joe's sells light coconut milk that only lists coconut milk and water as

the ingredients. They also always say they list everything on their labels when

you email them, but this is also made in Thailand and I am scared to try it.

Anyone have more information?

Eat Well, Feel Well llsts it as okay, as of a few years back. But like

everything,

it's try at your own risk and back off if you get a reaction.

I had some this week - though I almost always make my own - ran out so I

hit up my emergency supply. It definitely doesn't taste like homemade -so I

think

it may have something in it. IMO only. Or maybe they use a different process

that somehow changes the taste - but then there is also the fact that it

doesn't separate, and I don't know how they get that to happen. I was fine

with it - but then I'm having a very, very stable week.

Maybe it tasted different (and doesn't separate) because it's a light coconut

milk?

I don't think so, because the cream was spread throughout. and lately I've been

diluting mine

into light as well, because I'm using it a lot and it is pretty fattening. It

could be

some kind of emulsion tech. I don't have. But I at least have suspicions.

Because an emulsified vinaigrette for example will separate over time.
