DCCC/farmer's cheese reciepes

I've found several reciepes for making your own "farmer's cheese"

1 gallon milk boil, juice 1 lemon, let sit 24 hrs strain curd from whey

or using buttermilk or rennet tablets etc

Only if you use 24 hr SCD yogurt instead of milk, which may not work in this

recipe.

Many people substitute dripped SCD yogurt for the DCCC.

it's in the cream cheese section of a lot of food stores now - friendships brand

- white rectangle package - even says SCd safe - I love that!! LOL

Acid cheese is not SCD legal. If you can find a legal buttermilk, ie, one

not containing illegals, that can be used to make DCCC. Just make sure yu

don't add milk or cream to the cheese curds after you have made

them.

No, you are using the buttermilk (without illegal additives, of course)

as the starter to ferment the milk. It's a room temperature

fermentation.

Use the long-set method, as it will remove most of the lactose. I

haven't made my own, but this looks like a good method, and pretty

detailed.
