Guest guest
what brand of raw honey is OK to use? Would it be possible to skip the cashews or maybe use another nut butter? I made this pie last night. I had strawberries that were close to going bad. It was easy to make and firmed up very nicely! What I'm wondering is if I could freeze it? I certainly don't want to eat the whole pie by myself in the next couple of days and my hubby doesn't like coconut. I have never frozen anything with coconut oil in it - that would be the question - is if that freezes and thaws OK?? It's SCD. YAY and looks so yummy and with all those beautiful strawberries in season. MMM I bet it'd be good without the honey too. Or, coconut meat in place of the strawberries. Or lemons. Mmmm. Endless possibilities. Crust:3/4 cup crushed pecans or walnuts1/4 cup dried unsweetened shredded coconutFilling:2 cups fresh strawberries1 cup raw cashews2 tablespoons vanilla extract1/2 cup raw honey1 pinch salt1 cup coconut oil, meltedGrind crust ingredients in food processor and press into bottom of a 9 inch pie plate, building up the sides slightly.Place all filling ingredients into blender and blend until smooth and creamy. Carefully pour on top of crust and refrigerate for 3 hours.http://bit.ly/ bphf54Misty KimbleCD - no medsSCD - 2 + years
Guest guest
I use local raw filtered honey. I don't know of any store bought brands. You can use your regular honey. This is a raw recipe so that's why it calls for raw. A lot of raw recipes call for cashew creme. I'm not sure if another nut would work though. I think they reason they use them is because of the flavor and consistency. You might be able to sub legal coconut creme. I'm fairly certain the Tropical Traditions coconut creme is legal but would be considered advanced. Here is a link. http://www.tropicaltraditions.com/coconut_cream_concentrate.htm Misty Kimble CD - no meds SCD - 2 + years > > > Would it be possible to skip the cashews or maybe use another nut > > butter?
