I wouldn't worry about it going bad. If it does, you'll usually see it start to separate and develop mold.Probably you should try just a spoonful or two at a time at first and see how you do. If you've never eaten yogurt your body is going to need to adjust to it. The acidophilus in it will kill some of your bad bacteria and that can cause some die-off, which could make you feel worse initially. But your body will adjust to it -- unless you turn out to have a casein allergy/sensitivity (casein is milk protein; lactose, the milk sugar, is "eaten up" in the yogurt-making process, so that shouldn't be an issue, even if you're lactose intolerant, as many of us are). Your yogurt will be fairly sour, so if you're not used to that, or that particular taste, I strongly suggest adding some honey (and cinnamon if you can eat it) or a spoonful of fresh fruit of whatever kind you like to your spoonful of yogurt to balance the natural sourness of the yogurt. I guess some people never get used to yogurt, but chances are that once you are used to it you'll start to love it.n-- Now available.
