First pizza since March 2009...so yummy...link to photos

Hi Team,

I've been satisfied with veggies, fruits, and meats for the last 16 months.

Every once in the while I'll make muffins or brownies...but haven't hustled hard

to recreate pre-SCD foods like pizza. But...I was feeling desperate recently

for that complex flavor/texture of pizza...and to my surprise: yums-ville!

I used the crust and tomato sauce recipies from _Recipes for the Specific

Carbohydrate Diet_ by Raman Prasad with just a few variations: added a 1/4c

Parmesan cheese to crust, used Provolone instead of Cheddar as topping and since

I can handle the heat...there was a heavy dose of crushed red pepper.

I 1.5x'd the sauce and put in muffin tins to freeze for future pizzas. And, my

dough made two small crusts which I cut in half. Ate one half (2 small pieces)

and put the other three halves in the freezer (hard to do...but I know I'll

thank myself three glorious times over the next few weeks).

Flattening the dough wasn't super easy at first--rather sticky. I ended up

oiling parchment and using a hand-sized piece of oiled parchment to flatten

evenly...worked like a dream. Then, I placed the parchment on our regular pizza

screen. Super crispy...just like I like it.
